Quick Fix Tortellini Soup

Creamy Italian-style soup that is filling and budget-friendly. My wonderful friend Janet shared this recipe with me and my family loves it. I usually have all the items in my pantry for a last minute supper or surprise guests The longer it sits the thicker it gets.

Quick Fix Tortellini Soup Ingredients

  • 1 pound ground beef

  • 1 (16 ounce) package frozen tri-color cheese tortellini

  • 2 (14 ounce) cans beef broth

  • 2 (10.75 ounce) cans cream of onion soup

  • 1 (10 ounce) can diced tomatoes with green chile peppers (such as RO*TEL)

  • 1 (15 ounce) can green beans, drained

  • salt and ground black pepper to taste

How to Make Quick Fix Tortellini Soup

  1. Heat a large skillet over medium-high heat. Cook and stir beef in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease.

  2. Combine ground beef, tortellini, beef broth, cream of onion soup, diced tomatoes with green chile peppers, green beans, salt, and pepper in a slow cooker.

  3. Cook on High for 1 hour.

Quick Fix Tortellini Soup Reviews

  • This has always been a family favorite. Today we changed it up and used Johnsonville Mild Italian Sausage. It was definitely tasty. A bit of an indulgence since we usually use lean beef but it was really good

  • This soup was really not good at all. I followed the directions to a T, the only thing different was that I used cream of mushroom soup because my grocery store didnt carry cream of onion soup. I think what it was was the diced tomatoes with green chiles - it gave it a spicy, Mexican flavor that just didnt jive with the rest of the soup. Also takes a lot longer in the crockpot than suggested. Definitely wont be making this again.

  • Im not sure if Cream of Onion soup is a geographical item, but its not in my grocery store. I used French Onion soup instead and French-cut green beans. I also added Ortega chilies. The soup is delicious. I poured it over steamed rice to make it a little more substantive.

  • Delicious, hearty taste. The combination of cream of onion soup, beef broth, and tomatoes is terrific. I used tomato sauce with green chilies, but followed the recipe for everything else. This is a great use for tortellini

  • I gave 5 stars-but that is with the following change:only use 1can cream of onion soup. I tried it with 2 cans and it is too salty and the cream soup flavor overpowers the other ingredients. This has become a staple at our house. My picky kids pick out the parts they like so we all eat it.
